The history of Amaranth stretches back thousands of years. It was first cultivated by the Aztecs 8,000 years ago and is still considered a native crop in Peru. Amaranth is considered a special crop in South America and is renowned as a nutritious food source and frequently used in ceremonial practices. Amaranth, just like Quinoa, is actually a seed and not a grain. However both are prepared and used in similar ways as wholegrains.

How to use

Cook Amaranth and use it as a breakfast porridge or rice alternative.

It can also be sprouted and added to salads or raw dishes.
Just soak for 1-2 days until the sprouts show.

1. Rinse before use. Use a ratio of 1 cup of Amaranth to 2 ½ cups of water.
2. Add Amaranth and water to a pot.
3. Bring to a boil, reduce heat, cover then leave to simmer for 15-20 mins.
4. As a breakfast porridge, try adding dried/fresh fruit, nuts and seeds.
5. As a rice alternative try adding herbs and sea salt to taste.
