Menu – Veganuary Supperclub 30th jan

Theme: Introduction to Plantbased and alkaline. We take you on a culinary journey of this seasons best local and UK organic produce, alongside Aja Nova alkaline friendly whole foods and holistic herbs.

 

Mushroom Momo’s – A spelt dumpling filled with a spiced mushroom and cabbage filling served with a squash velouté, tadka sage and spices, toasted seeds and chlorella oil

 

Jollof Malfouf – Steamed cabbage leaf parcels filled with jollof quinoa, pureed almond and chickpea red red stew,  topped with crispy chickpeas baked with homemade shito

 

Lentil Utappam – a South Indian style fermented pancake topped with green seasoning and coconut chutney, pickled quince and green chilli and

Pre dessert – Seamosss Panna cotta flavoured with annatto, fennel seed and cardamon, in key lime and ginger syrup

 

Dessert – Spiced apple and mulberry compote with kamut and walnut sable, elderflower Crémeux, caramelised kamut crumb

Drink – Sorrel, a famous Caribbean Hibiscus beverage made with spices and citrus
